PROCESS
Our strictly high-ground coffees are processed predominantly using the Wet Method which is considered the process of higher quality and is traded at a higher price level.
Sorting and cleaning are necessary after harvesting the ripe cherries. After sorting and cleaning, the pulp is removed from the cherry. This process is the main difference between dry and wet methods, as the flesh is separated from the fruit before drying. The step is referred to as "pulping".
The pulping is done by machine - the cherries are pressed between fixed and moving surfaces. The flesh and the skin of the fruit remain on one side, the beans still enclosed in their parchment on the other side. The distance of the moving surfaces is constantly adapted so that the beans are not damaged.
Next, the coffee cherry's mucilage is removed through fermentation, and finally, the beans are sun-dried in the Company Holding sun-dry coffee mill.
The Dry Mill is the second transformation process that coffee goes through, washed or natural. In this process, the parchment coffee obtained from the wet mill process is Dried by the sun or mechanized to reduce the green/raw coffee’s humidity and then it’s milled one more time to eliminate the parchment from the coffee.
The final objective of the Dry mill is more than just eliminating the parchment. In the Dry Mill, most defects of the coffee bean are eliminated by mechanized, optic, and manual processes.
Next, follows the most important process of all, the coffee roasting. Roasting coffee transforms the chemical and physical properties of green coffee beans into roasted coffee products. The roasting process is what produces the characteristic flavor of coffee by causing the green/raw coffee beans to change in taste. Unroasted beans contain similar if not higher levels of acids, protein, sugars, and caffeine as those that have been roasted, but lack the taste of roasted coffee beans due to the Maillard and other chemical reactions that occur during roasting.
Finally, Coffee is ground, packed, and shipped to local stores.
